Eyal (Hanuman) Aspler (Thai: หนุมาน อาสเปอร์; Hebrew: הנומן אספלר) is a French-Israeli physician and food scholar, known for his skill and expertise in Thai cuisine.[1][2] His extensive work on ThaiFoodMaster.com deeply engages with the history and culture of Thai cuisine. He digitizes ancient manuscripts, ensuring their preservation and public access, emphasizing his commitment to educating others and preserving Thailand's culinary heritage.[3][4][5][6] Hanuman's way of teachings is deeply analytical, thorough, and rooted in a profound understanding of Thai culinary culture. He is described as a mentor who offers not just recipes but also a nuanced understanding of the historical, cultural, and technical aspects of Thai cuisine. In 1996, Aspler and goldsmith Charles Lewton-Brain co-founded the Ganoksin Project, an educational website for jewelers.[9]
Aspler moved to Thailand in 1989, and specializes in pre-war Siamese dishes.[10][11][12] Aspler owns a 15 rai farm outside of Chiang Mai, Three Trees Doi Saket, where he operates a professional Thai cooking school.[13][14] Previous students have included Dylan Eitharong, Bee Satongun, and Leah Cohen.[15][16]
